An exceptional finale for the 7th edition of the Frederic Delair National Trophy !

Created in tribute to Frédéric Delair—former owner of La Tour d’Argent and an iconic Maître d’Hôtel who codified the pressed duck recipe in 1890—the Delair Trophy has, over the years, established itself as a key event for young talents from hospitality schools and for the profession as a whole. This national competition celebrates the art of service, combining precision, technical expertise, attention to detail, and guest experience.

Yesterday marked the final of the 7th edition of the Delair Trophy, held at Médéric, the Paris Médéric hospitality school. The event was presided over by André Terrail and sponsored by actor François-Xavier Demaison, alongside the renowned Chef Pierre Gagnaire, patron of this edition.

Six finalist duos, selected from across France, competed in an intense contest blending technique, creativity, and elegance in service. This demanding competition, structured around emblematic service disciplines—such as duck carving, crêpe flambéing, coffee creations, cheese recognition, cocktail creation, and table setting—reflects the highest standards of the profession.

At the end of the trials, Pauline Pinna-Gilly and Thomas Iglesias from The Lyfe Institut distinguished themselves and were awarded the trophy, praised for their mastery and professionalism. Supported by premium partners such as Metro France, Cafés Richard, American Express, as well as Classhôtel, Christofle, Moulins Familiaux, RL Legras, and Distillerie Combier, the day unfolded with both adrenaline and emotion, under the watchful eye of a prestigious jury composed of renowned professionals.

The young talents demonstrated both their savoir-faire and savoir-être, brilliantly embodying the French Art of Hospitality. The Delair Trophy thus continues its mission of promoting service professions, revealing each year a new generation of passionate professionals, committed to excellence and the preservation of French gastronomic tradition.
