La Tour d’Argent at l’Excellence Gastronomique 2024 : an extraordinary evening.

On October 14, 2024, La Tour d’Argent had the honor of participating in the prestigious event “L’Excellence Gastronomique,” held at the Pavillon Gabriel in Paris. This evening, dedicated to the excellence of French cuisine, brought together renowned chefs, including our Chef Yannick Franques, who presented one of his signature recipes for the occasion.

Now in its eleventh consecutive year, L’Excellence Gastronomique celebrates French tradition through a selection of exceptional dishes and the recognition of emerging culinary talents. Led by the Lebey guide and Pierre-Yves Chupin, this event has become an unmissable rendezvous for gastronomy enthusiasts. This year, four emblematic chefs were honored: Eugénie Béziat (Espadon, Ritz Paris), Guillaume Galliot (Caprice, Hong Kong), Maxime Frédéric (Plénitude, Cheval Blanc Paris) for desserts, and of course, our Chef Yannick Franques.

During this unique dinner, each chef presented one of their recipes, showcasing their expertise, creativity, and culinary signature. Yannick Franques impressed the guests with the “Caneton au fil du temps” from our restaurant, a dish featuring roasted duck breast with smoked almonds, accompanied by eggplant caviar with Greek yogurt, a pastilla of leg in stifado, and enhanced by a Corinthian molasses jus.

L’Excellence Gastronomique is not just a prestigious dinner; it is also a platform that highlights the young generation of talented chefs. The 2024 awards recognized the best creations of the year, reaffirming the importance of technique and innovation in French cuisine.
