Originally from Brittany, Billy Noël inherited his passion for gastronomy from his family. Raised on comforting and shared dishes, cooking quickly became the guiding thread of a well-defined future. Having worked notably for the Jadore Hospitality Group as Executive Chef at Moloko Paris, Saint-Tropez, and Miami, he stands out with a simple, generous, and convivial cuisine that highlights seasonal products.

Now at the helm of the kitchens at Rôtisserie d’Argent, he is dedicated to offering French bistronomic cuisine that is hearty and gourmet, in keeping with the Parisian bistro spirit. With unmissable dishes like the 2022 World Champion eggs mayonnaise, the inimitable roast chicken, or the delicate confit duck leg, Billy ensures the continuity of the “Titi Parisien” atmosphere that reigns in the Rôtisserie’s plates!
