Little sister of the Tour d’Argent, the Rôtisserie d’Argent cultivates the spirit of a true Parisian bistro: a House where mastery of cooking techniques reigns, where flavour speaks for itself, and where signature dishes uphold a certain vision of French culinary heritage.
Among these emblems, roast chicken holds a special place. A dish that may appear modest, yet here it is executed with a level of precision that speaks volumes about the House’s expertise. No miracle tricks, just the essential : a Label Rouge free-range chicken slowly turning on the spit, golden skin crisped to perfection, juicy meat, and that delicate, pearled jus that enriches the plate without overwhelming it.
Around it, the ritual of comfort: garlic roasted in its skin, confit until sweet and caramelised, and a silky potato purée that carries a hint of childhood memories.
