At the Tour d’Argent, the new all-chocolate dessert pays homage to the Tour d’Argent Chocolate, a 72% single-origin from the Dominican Republic, distinguished by its soft coconut notes and subtle acidity.
The Chef presents a creation built on textures : a delicate chocolate shell filled with a smooth chocolate cream, set atop a fleur-de-sel crumble with a refined crunch. A light chocolate emulsion adds freshness, while a chocolate ice cream with warm sauce reveals the full aromatic depth of the chocolate.
A few crisp cacao gavottes complete the picture.
