The “Chocolat Noir 72%”

Created by our Pastry Chef, Mourad Timsih, this dessert is composed of a chocolate shell with a chocolate cream in its center, a chocolate crumble with fleur de sel, a caramelized cocoa nibs nougatine and a “very chocolate” mousse. To enhance the whole, a crispy cocoa tuile and a creamy chocolate ice cream cover the structure.
