For Mother’s Day, Le Boulanger de la Tour pays tribute to sweetness and elegance with an exclusive creation by Chef Pâtissier Mourad Timsih. Imagined as a gourmet declaration, our framboisier offers a refined and generous take on a beloved classic of French pâtisserie.

Beneath its delicate appearance, this dessert reveals a perfectly orchestrated interplay of textures and flavors. It begins with a tender vanilla sponge made with brown vergeoise sugar — soft and fragrant. Then comes a crisp almond layer, adding a subtle crunch. At its heart lies a raspberrylime compote, balancing the sweetness of a light mousse infused with organic Madagascan vanilla.

Each bite is crafted to evoke the tenderness of a shared moment and the joy of an honest, heartfelt dessert.

Available in two sizes — individual at €8.50, or for sharing (serves 5 to 6) at €45 — this framboisier is designed for all kinds of celebrations, from the most intimate to the most festive.
