Since the renovation of the Restaurant, La Tour d’Argent has been committed to bringing together exceptional craftsmanship that embodies the French art of living. In this spirit, we entrusted ceramist Sylvie Coquet, heir to a lineage of Limoges porcelain makers, with the creation of a bespoke collection of plates. Handcrafted in her atelier, each piece is the result of her creativity and ongoing dialogue with our Chef, Yannick Franques. With rare technical mastery, fueled by innovation, artistic sensitivity, and deep respect for the material, Sylvie Coquet is an artist in every sense of the word.
In close collaboration with Chef Yannick Franques and our Director Stéphane Trapier, she imagined a series of plates designed not only to showcase the emblematic dishes of La Tour and its Chef, but also to accompany the art of tableside service. Each shape, each curve, each detail is conceived as part of a multi-act performance — a true culinary choreography.
Our Foie Gras des Trois Empereurs, for instance, is presented on a “deconstructed” plate, whose elements gradually reveal a handwritten quote during the service: Claude Terrail’s celebrated motto, “There is nothing more serious than pleasure…”
Our iconic Canard Frédéric Delair, served in three sequences, is placed on porcelain adorned with a delicate feather — a final touch that echoes the elegance and story of the dish itself.
