In tribute to the beehives that adorned the Roof of the Tower until 2016, our Head Bartender, Diego d’Agnolo, has crafted a unique cocktail: the “Bee my Baby.” This creation celebrates the harmony of flavors and the spirit of innovation that define our establishment.

This cocktail is an exquisite blend that promises an experience akin to savoring a vintage champagne. The homemade sparkling pollen wine forms the foundation of this creation, bringing a delicate effervescence and a rich floral sweetness reminiscent of the finest honey. This base is subtly complemented by the complexity of a French single malt whisky from Maison Benjamin Kuentz, chosen for its nuanced flavors and smooth finish. To add a touch of freshness, a hint of ginger water is incorporated, introducing a subtle spice that lingers pleasantly on the palate.
