On November 2, 2026, our Maison will reunite with the École de Paris des Métiers de la Table (EPMT) for an exceptional dinner dedicated to the art of passing on knowledge and tradition.
For more than four centuries, La Tour d’Argent has cultivated an art de vivre in which every detail matters: its iconic recipes, of course, but also the gestures, service rituals and art of hospitality. This living heritage is something we are deeply committed to sharing with future generations.
At La Fontaine, the EPMT’s training restaurant, our teams will guide culinary and service apprentices in preparing and delivering a five-course menu. Alongside Yannick Franques, our Chef and Meilleur Ouvrier de France, they will discover the exacting standards of our cuisine. With Stéphane Trapier, our Director of Restaurants, they will explore the codes of exceptional service.
On the menu: our famous duck, Mademoiselle crêpes flambéed tableside, wines from our historic cellars and cocktails created by our mixologist. Together, these expressions of savoir-faire embody a belief dear to our Maison: gastronomy is passed down as much through gestures as through flavours.
This event builds on a longstanding collaboration with the EPMT, which trains young talents who go on to join our teams each year.
The partnership is all the more meaningful given that Yannick Franques himself trained at the school.
For one evening, our heritage will leave the banks of the Seine at Quai de la Tournelle to live on in the hands of those who will shape the future of gastronomy.
