Chef’s recipe : seasonal duckling
To celebrate the arrival of spring, Chef Yannick Franques unveils a creation full of finesse : seasonal duckling. Roasted duck breast dusted with walnuts, fermented cabbage, and fingerling potatoes wrapped in smoked duck breast — all enhanced by a delicately horseradish-infused jus. A seasonal dish now available on the restaurant’s menu.

In tribute to the beehives that adorned the Roof of the Tower until 2016, our Head Bartender, Diego d’Agnolo, has crafted a unique cocktail: the "Bee my Baby." This creation celebrates the harmony of flavors and the spirit of innovation that define our establishment.
