As Easter approaches, the Baker of the Tour d'Argent unveils a creation that is both generous and refined: The Easter Egg. Beneath its delicate appearance lies a play of textures and flavors: a chocolate sponge studded with caramelized pecan pieces, a crisp pecan feuillantine, a smooth Dulcey chocolate mousse, and a flowing caramel center for an irresistibly indulgent touch. To finish, a chocolate egg crowns this seasonal creation.

Aspargus takes the stage
It’s the season we’ve been waiting for : asparagus delicate, refined, and fleeting. At Tour d'Argent, Chef Yannick Franques elevates this exceptional ingredient in a composition of subtle harmony : white asparagus from the Île-de-France region, vin jaune butter, morels delicately infused with toasted walnut oil, and shavings of aged Comté.
